Christmas Cake

List of Ingredients
- 500g sultanas
- 250g currants
- 250g raisins
- 300g pitted prunes
- 400g glace fruit
- 200g chopped pecan nuts
- 1/2 cup orange marmelade
- 1 cup brandy
- 500g butter
- 500g brown sugar
- 8 large eggs
- 3 cups plain flour, sifted
- 1 cup self raising flour, sifted
- 2 teaspoons mixed spice
- 2 teaspoons ground cinnamon
- 125g blanched almonds
- 125g additional glace cherries
Instructions
- Combine fruit, nuts, marmalade and brandy in a bowl. Mix well. Cover and stand 3-4 days.
- Cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, beating well after each addition.
- Add creamed mixture to fruit mixture. Mix well.
- Fold in sifted flour and spices.
- Spoon mixture into a greased and paper lined 25cm swquare cake pan. Smooth the surface and arrange almonds and cherries decoratively on top of the cake
- Bake in 150c oven for 3.5-4 hours
- Wrap cake well in a clean cloth and stand 8 hours, or until completely cold. When cold, remove from pan.
