Frozen Christmas Pudding

List of Ingredients
- 1/2 cup sultanas
- 1/2 cup currants
- 1/4 cup glace cherries
- 1/4 cup mixed fruit peel
- 1/4 cup brandy or fruit juice
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 cup blanched almonds
- 1/2 cup cream
- vanilla or chocolate icecream
Instructions
- Combine fruit, liquid and spices (all ingredients except almonds, cream and icecream. Stand at least 24 hours to allow flavours to mix.
- Remove icecream from freezer and let it sit to soften slightly.
- Mix together fruit, almonds, cream and icecream.
- Place in a large mould (preferably a Christmas pudding shape). Cover top with foil.
- Freeze until firm.
- To serve, quickly dip in hot water and remove from mould.
- To decorate at Christmas time, place plastic holly on top of the icecream pudding.
