Mud Cake

- 1 cup raw sugar
- 200g butter, chopped
- 200g dark chocolate, chopped
- 1/4 cup hot water
- 1 tablespoon instant coffee powder
- 2 tablespoons vanilla essence
- 3 eggs
- 3/4 cup of plain flour
- 2 tablespoons cocoa powder
- 1 1/2 teaspoons baking powder
- cocoa powder, to serve
Instructions
- Preheat oven to 160c. Grease and line a 22cm cake pan.
- Combine the butter, chocolate, water and coffee powder in a saucepan over low heat. Cook, stiring constantly for 5 minutes or until mixture is smooth. Remove from heat and pour into a bowl.
- Add the vanilla essence and raw sugar. Mix well to combine. Stir in the eggs, one at a time, mixing well after each addition.
- Sift the flour, cocoa powder and baking powder together and whisk into the chocolate mixture. Pour into the prepared pan, and bake 50-60 minutes, or until crumbs cling to a skewer when inserted in the centre.
- Cool in the pan for 10 minutes before turning onto a wire rack.
- To serve; dust with extra cocoa powder and serve with thick cream, or icecream, if desired.
