Shortbread

- 2 cups butter
- 1 cup sugar
- 1/4 teaspoon vanilla
- 4 cups of flour
- lemon juice
Instructions
- Cream butter, add sugar, and blend thoroughly. Add vanilla and dash of lemon.
- Divide flour into four even portions. Add flour in portions, and mix well after each addition.
- Turn out on a lightly floured board, and knead well.
- Shape into a large rectangle. Cut into 1 inch by 3 inch rectangles, and prick deeply with a fork.
- Transfer shortbread bars onto ungreased pan (there is enough butter in the dough). Place bars 1 inch apart.
- Bake in moderate oven (350F) for 20-30 mins or until very light brown.
