Creamy Rice Pudding

- 3/4 cup sugar
- 2 Tbsps cornstarch
- 1/4 tsp salt
- 2 cups milk
- 2 egg yolks
- 2 cups cooked rice
- 1/2 cup raisins*
- 1 Tbsp butter
- 1 tsp vanilla
- * plump in hot water while preparing rest of pudding
Instructions
- Combine sugar, cornstarch and salt in pan. Gradually stir in milk.
- Cook over medium heat, stirring constantly, until boiling and thickened. (about 8 minutes)
- Cook 1 more minute (don't know why but I do)
- Remove from heat.
- Beat egg yolks slightly with a fork. Stir small amount of hot mixture into eggs.
- Pour back into hot mixture, blending well.
- Cook 2 minutes on low heat. Remove from heat.
- Stir in rice, raisins, butter and vanilla. Let stand 10 minutes and stir gently.
Final Comments
A nice dessert.
