    Creamy Rice Pudding

    List of Ingredients


    • 3/4 cup sugar
    • 2 Tbsps cornstarch
    • 1/4 tsp salt
    • 2 cups milk
    • 2 egg yolks
    • 2 cups cooked rice
    • 1/2 cup raisins*
    • 1 Tbsp butter
    • 1 tsp vanilla
    • * plump in hot water while preparing rest of pudding


    Instructions


    1. Combine sugar, cornstarch and salt in pan. Gradually stir in milk.

    2. Cook over medium heat, stirring constantly, until boiling and thickened. (about 8 minutes)

    3. Cook 1 more minute (don't know why but I do)

    4. Remove from heat.

    5. Beat egg yolks slightly with a fork. Stir small amount of hot mixture into eggs.

    6. Pour back into hot mixture, blending well.

    7. Cook 2 minutes on low heat. Remove from heat.

    8. Stir in rice, raisins, butter and vanilla. Let stand 10 minutes and stir gently.

    A nice dessert.
