    Grilled Pineapple,Peppers & Onion

    List of Ingredients


    • 2 green bell peppers,quartered and seeded
    • 4- 1 in. thick slices of pinapple,pared
    • 4 large 1/2-in. thick slices Spanish onion
    • Nonstick Spray
    • 1/4 cup lowfat honey-dijon mustard
    • Garnish: chopped cilantro


    Instructions


    1. Grill peppers 5 to 6 minutes per side until slightly charred and crispy-tender.Remove to serving platter.

    2. Lightly coat pinapple and onion slices with nonstick spray.Grill pinapple 2 minutes per side or until heated through and onion 3 minutes per side or until slightly charred and crisp and tender.

    3. Add to platter;drizzle with dressing and sprinkle with cilantro.
