Hobo's Carrot Cake

List of Ingredients
- 2 cups sugar
- 2 cups flour
- 2 tsp cinnamon
- 2 tsp baking soda
- 4 eggs beaten
- 1 (8 oz) can CRUSHED pineapple and juice
- 1 1/4 cups oil
- 2 tsp vanilla
- 1 tsp salt
- 3 cups grated carrots
- 1 cup pecans, chopped
- 1/2 cup coconut

- CREAM CHEESE FROSTING INGREDIENTS
- 6 oz cream cheese
- 3 1/2 cups powdered sugar
- 1/2 cup butter
- 1 tsp lemon juice
- dash of salt
Instructions
- Preheat oven to 350 degrees.
- Sift flour, sugar, cinnamon, baking soda and salt into a bowl.
- In another large bowl, mix eggs, pineapple and the juice, oil, vanilla, coconut, carrots and pecans.
- Stir in the dry ingredients, mix well.
- Bake in a well greased, 9x13x2" pan for about 40 minutes or till a toothpick comes out clean.
- Let cool 1 hour before frosting the cake.

- CREAM CHEESE FROSTING DIRECTIONS
- With a hand mixer, cream together cream cheese and butter.
- Add the salt and lemon juice.
- Slowly add the powdered sugar and mix after each addition.
- Mix all until smooth. Spread with a rubber scraper.
Final Comments
Absolutely wonderful carrot cake and does NOT taste at all like vegetables.
