Recipe Introduction
This was from a cookbook of my mother's that she got at a garage sale. Book is called, "Sharing Our Best" from the Assumption Church of Eden Valley.
List of Ingredients
- 1 (10 1/2) oz can cream of mushroom or chicken soup
- 1 soup can of milk
- 3/4 cup uncooked long grain white rice
- 1 (4oz) can of mushrooms plus liquid
- 1 envelope Lipton onion soup mix
- 3 boneless chicken breasts, cut in half

Instructions
- Mix the mushroom soup with the milk. Reserve 1/2 cup of this for later use.
- Combine the above mixture with rice, mushrooms and liquid and 1/2 of the onion soup mix, and place this in a 9x13x2" pan.
- Place breasts on top of the above mixture.
- Pour reserved soup mixture over the chicken breasts.
- Sprinkle the rest of the onion soup mix on top of all.
- Cover with aluminum foil.
- Bake in a preheated oven at 350 degrees for 1 hour. Uncover and bake 15 minutes longer.
- Add a little water if it looks too dry.
Final Comments
This recipe serves 6 people or 3 people who want 2nd helpings. You can use fresh mushrooms and a little water instead of the canned mushrooms. You can also use 1/2 cup long grain rice and 1/4 cup uncooked wild rice.
