PECAN PIE BARS

List of Ingredients
- 2 cups flour
- 1/2 cup sugar
- 1/8 tsp salt
- 3/4 cup butter, cut up
- 1 cup firmly packed light brown sugar
- 1 cup light corn syrup
- 1/2 cup butter
- 4 large eggs, beaten
- 2 1/2 cup finely chopped pecans
- 1 tsp vanilla extract
Instructions
- Preheat oven to degrees.
- BASE - Combine flour, sugar and salt in a large bowl and cut in 3/4 cup butter with a pastry cutter or 2 knives, till it resembles coarse crumbs.
- Press mixture into a greased 13x9x2" pan with a piece of waxed paper, pressing down with your palms.
- Bake in a preheated oven at 350 for about 17 to 20 minutes and cool.
- TOPPING - Combine brown sugar, corn syrup and 1/2 cup butter in a saucepan; bring to a boil over medium heat, stirring gently. Remove from heat.
- IMPORTANT - Do next in order given. Beat the 4 eggs. Stir in 1/4 of the corn syrup mixture into beaten eggs mixture. Then add to the rest of the hot mixture. Stir in the pecans and the vanilla and pour over topping.
- Bake at 350 for 30 to 35 minutes in a preheated oven at 350 degrees.
Final Comments
Cool before cutting.
