SAVORY BEEF ROLL-UPS

I saw this on an old TV show years ago from a guest chef, can't remember who.
Recipe Introduction
Any type of cream cheese can be used, but for this I prefer either plain cream cheese or vegetable flavored.
List of Ingredients
- 1 pkg flour tortillas
- 1 pkg cream cheese
- 1/2 lb roast beef, thinly sliced from the deli
- 1 head of lettuce
- 1 bag of cheddar cheese, shredded or whatever type of cheese you want
- baby carrots, chopped fine or grated
- aluminum foil or waxed paper
- toothpicks
Instructions
- Tear off a piece of aluminum foil so the size of the tortilla you have will be able to be rolled up in to keep in the fridge with.
- Place tortilla on top of foil.
- Spread with creem cheese in the center until you get to about one inch away from the edge.
- Place a piece of beef or two on top of the cream cheese.
- Place some lettuce on beef.
- Sprinkle with shredded cheese.
- Sprinkle on top of that the finely chopped carrots.
- Roll up the tortilla like a jelly roll. **I sometimes put a little cream cheese on each end and tuck it in. The cream cheese on the end secures it.
- Roll up in the foil or waxed paper and chill for an hour or so before eating.
- You can cut these up and secure them with toothpicks for appetizers OR eat them whole as a sandwich for lunch.
Final Comments
I like roast beef for these, but other lunch/deli meats can be used, too.
