BAKED POTATO SOUP

This is much like the soup at Tony Roma's restaurant.
List of Ingredients
- 4 large potatoes
- 2/3 cup butter
- 2/3 cup flour
- 1 1/2 quarts milk
- salt
- 4 green onions, chopped
- 1 cup sour cream
- 2 cups crisp, cooked and crumbled BACON
- 5 oz grated cheddar cheese
Instructions
- Heat oven to 350 degrees and bake the potatoes till tender.
- Melt the butter in a medium saucepan.
- Slowly blend in the flour with a wire whisk until blended thoroughly.
- Gradually add the milk to the butter/flour mixture, whisking constantly.
- Whisk in salt, stir occasionally.
- Cut up the baked potatoes in half, scoop out the meat and set the peels aside.
- When milk mixture is very hot, whisk in potato.
- Add green onions and the potato peels, if desired.
- Whisk well and add the sour cream and crumbled bacon. Heat thoroughly.
- Add cheese in a little at a time until it is melted in and serve.
