HAM AND TURKEY ROLL UPS (with Wild Rice)

List of Ingredients
- 1 cup dry wild rice, cooked according to package
- 8 slices deli ham (or lunch meat)
- 8 slices turkey or chicken, deli or lunch meat
- 1 small onion, chopped
- 1 can cream of mushroom soup
- 1 cup sliced, fresh mushrooms, sauteed
- 1 cup sour cream
- 2 Tbsp butter
Instructions
- Preheat oven to 350 degrees.
- Prepare wild rice according to package. Sautee' onions and fresh mushrooms in butter in a frying pan till tender. Set aside.
- In a large bowl, mix thoroughly the rice, sour cream, soup, mushrooms and onions.
- Blend in the cooked rice and blend well.
- Place 1/e of the mixture in a greased 9x13x2" baking dish.
- Make 8 roll ups. To make them, do the following-- Place a Tbsp of remaining rice mixture on a piece of lunch meat, roll up and secure with a toothpick.
- Place roll up on top of mixture in pan and repeat process. Line the roll ups in the pan down the middle, or where ever.
- Spoon the rest of the rice mixture in the pan. It will not cover all of the meat.
- Bake at 350 degrees for 40 minutes.
Final Comments
***I added the water chestnuts to the mixture in pan, but not the roll ups. Unless you chop them first.
