    Cornflake Chicken

    I made this from my very first cookbook.

    List of Ingredients


    • Chicken pieces; similar sized(what ever cuts you & yours like)
    • 1/2 cup of your favorite butter/margarine
    • 1/2 bag of cornflakes, crushed
    • Seasonings(I like Mrs. Dash for this, but use your faves)


    Instructions


    1. As far as the chicken goes, the most important thing is that they are similar sizes so that they cook at the same time. I'm a fan of using chicken breast tenders but I use bone-in thigh/leg sections just as often.

    2. OK-pat your chicken dry with paper towels. Sprinkle it with some s&p. Heat oven to 375'F. Line a cookie sheet with foil and coat with spray.

    3. Melt the butter/margarine and mix in some spices.Set up your butter and crushed cornflakes in separate dishes big enough to dip chicken in.

    4. Dip the chicken into the butter and then roll and press into cornflakes. Arrange on baking sheet with some space in between pieces.

    5. Pour extra butter over chicken and sprinkle with leftover crumbs.

    6. Bake, uncovered, until done. 15-20 minutes for tenders; about an hour for bone-in pieces.

    7. Get your piece before you call your family for dinner. Make sure to get some extra crunchies out of the pan. They're the best part.



    Final Comments


    You can swap the cereal out in the recipe. I've done honey bunches of oats, frosted flakes, bran flakes. . . My best friend makes this with fruity pebbles for her girls...I'm not to sure about that, but they love it.
