    Crunchy Pan-fried Pork Chops

    This pork chop recipe is super tasty and quick too. The key to how tender they are is to purchase pork loin chops-boneless, small, slightly thick ones, sometimes labeled as assorted.
    Bonus-they're usually on sale.


    List of Ingredients


    • Boneless Pork Loin Chops
    • Salt/Pepper/Paprika
    • Garlic&Herb Seasoning
    • Flour
    • Panko Bread Crumbs
    • Eggs
    • Milk
    • Water
    • Oil


    Instructions


    1. Pat pork chops dry with paper towels. Season liberally with s&p. Dust with a bit of flour.

    2. Whip together 1-2 eggs with a splash of water and about a cup of milk.
    3. Mix together flour and breadcrumbs- about 3 parts flour to 1 part panko. (The panko is what makes them cruncy. Season your flour mix with salt, pepper, a few dashes of paprika, and the garlic/herb seasoning blend.
    4. Turn your oven on to warm. Put in a cookie sheet lined with foil. Heat (MED) a thin layer of oil in your skillet.
    5. Dip your flour-dusted chops into the egg mixture, let drip a second; coat with flour/crumb blend. Shake off excess and place pork into hot oil.
    6. Please don't crowd the pan, these guys need room to tan.
      Thats why we have the oven on warm anyway.
    7. Brown, turning often, for 10 or so minutes or until cooked through. But remember, they will keep cooking while they're waiting in the oven. Overcooked=Dry
      Strain and add oil between batches if needed.
    8. Remove from oil, let them drain a minute and stick them in the warm oven to relax a while.
    9. Strain out stray breading bits if they start to burn as you're cooking. Use the leftover oil to make delicious homemade gravy.


    Final Comments


    These pork chops are tender, moist and flavorful. Don't be surprised when people don't believe how easy they are to make.
    And don't forget the mashed potatoes...
