Recipe Introduction
This soup will warm your belly and if you're like me, it will bring back memories of your younger days. I hope you enjoy it.
List of Ingredients
- 1/4 c. oil
- 1 sm onion, diced
- 1/4 c. flour
- 1 lg bunch broccoli
- 3 c. milk
- 3/4 block or more Velveeta or generic cheese product(cub
- Salt/White Pepper/Cayenne
- 3 c. chicken stock
Instructions
- Heat your chicken stock and use it to blanch the broccoli. (How to blanch-bring your liquid to a boil, drop in your veggies, allow to cook for 3-5 minutes, sieve out veggies and immediately drop them in a bowl of ICE WATER). Turn the heat off your stock and keep it handy.
- Heat the oil (MED) in your stock pot or soup pan. Toss in the onion and sweat it for a minute. Turn heat to low and stir in the flour. Let this cook for a minute while you stir it. Congratulations-You just made a roux.
- Slowly stir in your chicken stock and milk. Add your seasonings to taste.
- Add in the cubed cheese product. Feel free to add in other cheeses if you want-this is your party. Stir frequently.
- When cheese is melted in, drop in your blanched and drained broccoli. Stir gently. Season again if needed.
- You can also toss in cooked chunks of chicken to make this soup meaty.
Final Comments
I like croutons on this, but I'll drink it from a coffee mug any day.
