    List of Ingredients


    • 5 cups peeled and sliced tart baking apples (about3lbs)...OR Canned apples (water packed only)
    • 3 tablespoons brown sugar
    • 1 tablespoon cinnamon
    • 2 tablespoons brandy
    • 1 tablespoon fresh lemon juice
    • 1 tablespoon corn starch
    • 1 cup flour
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1/3 cup finely chopped almonds
    • 1/4 cup plus 1 tablespoon sugar
    • 4 tablespoons butter- cold
    • 1/3 cup milk
    • 1/4 teaspoon almond extract


    Instructions


    1. Preheat oven to 425 degrees.
    2. If using fresh apples combine the first five ingredients and saute until only slightly softened in 3 tablespoons of butter.
    3. Remove from heat and stir in corn starch and continue with recipe.
    4. If using canned apples, use the water packed variety, drain welland combine with the first 6 ingredients.
    5. Spoon the mixture into a 2-quart baking dish.
    6. For the dough, sift the flour,baking powder, and the salt into a mixing bowl.
    7. Stir in the ground almonds and 1/4 cup sugar.
    8. With 2 knives, or a pastry blender, cut in the butter until the mixture resemblescoarse crumbs.
    9. Add the milk and almond extract and stir until the dough is just combined
    10. ***** DO NOT OVER MIX *******
    11. Drop by spoonfulls onto the apples.
    12. Sprinkle with the remaining tablespoon of sugar.
    13. Baker until the cobbler topping is browned, 30-35 minutes.
    14. Serve hot


    Final Comments


    This is a great recipe a la mode meaning with a side scoop of vanilla ice cream...Peaches or mixed berries can be substituted for the apples. In that case you could substitute peach or berry flavored brandy, and the cinnamon would be omitted. White sugar can be used with the fruit if desired. ....ENJOY!!
