    List of Ingredients


    • 1 1/2 cups flour
    • salt & freshly ground pepper
    • 4 eggs
    • 2 Tablespoons Dijon mustard
    • 2 cups dried mashed potato flakes
    • 3 tablespoons canola oil
    • 4 (4oz) about one inch thick...codfish steaks..OR fillets can be submitted
    • Lemon Butter Sauce:
    • 1/2 cup dry white wine
    • 3 tablespoons lemon juice
    • 2 teaspoons minced garlic
    • 1 tablespoon minced shallots
    • 10 tablespoons chilled unsalted butter, cut up
    • 1 tablespoon finely chopped fresh parsley


    Instructions


    1. Place the flour in a shallow bowl and season with salt and pepper.
    2. In another shallow bowl, beat the eggs with the mustard.
    3. In a third shallow bowl, place the dried mashed potato flakes.
    4. In a large ovenproof saute pan; heat oil.
    5. Dip the cod steaks or fillets in the flour, then the egg mixture, and finally into the potato.
    6. Add the fish to the saute pan and cook for 2 minutes per side.
    7. Then place the fish into the oven for 4 minutes, until the fish is cooked through and golden.
    8. Lemon Butter Sauce:
    9. set a large non-reactive saucepan over high heat.
    10. Add the wine,lemon juice,garlic and shallots.
    11. Cook for about 5 minutes or until liquid is reduced by 2/3
    12. Over low heat,wick in 6 tablespoons of the butter a few pats at a tim.
    13. Remove from the heat and wisk in the remaining 4 tablespoons of butter, 1 tablespoon at a time.
    14. Continue wisking until all of the butter is incorporated into the sauce.
    15. Strain the sauce,pressing all of the liquid into the bowl.
    16. Stir in the parsley
    17. Pour generously over fish
