    Delightful twist on chicken


    List of Ingredients


    • 1/4 cup chiken broth
    • 3 tablespoons soy sauce
    • 1 teaspoon ground ginger, divided
    • 2 bone-in chicken breast halves (6oz each), skin removed
    • 1 can (8oz) unsweetened crushed pineapple, undrained
    • 1 teaspoon cornstarch
    • 2 teaspoons orange marmalade
    • 1 teaspoon lemon juice


    Instructions


    1. In a large resealable bag, combine the broth,soy sauce and 1/2 teaspoon ginger; add chicken.
    2. Seal bag and turn to coat,refrigerate for about 2 hours and turn over every now and then.
    3. Drain pineapple, reserving 1/2 cup of the juic; set aside 1/4 cup pineapple.refrigerate remaining juice and pineapple for another use.
    4. In a saucepan, combine cornstarch and reserved juice until smooth.
    5. Stir in pineapple,orange marmalade,lemon juice, and remaining ginger.
    6. Bring to a boil.Cook and stir for 2 minutes until thickened.
    7. Drain and discard marinade.
    8. Place chicken in a 9in square baking dish coated with nonstick cooking spray.
    9. Top with pineapple mixture.
    10. Bake uncovered at 350 degrees for 45 to 50 minutes or until juices run clear.
    11. Yield" 2 servings
