Low Fat Potato Salad

List of Ingredients
- 2 1/2 lbs little red potatoes scrubbed and cut into 3/4 inch chunks
- 1 small bay leaf
- 2 whole garlic cloves,peeled
- 1 cup minced sweet red onion
- 2 tablespoons fruity olive oil
- 2 tablespoons tarragon white wine vinegar
- 1 teaspoon whole-grain dijon mustard
- 1 teaspoon salt to taste 1/2 teaspoon celery seed
- 1 cup buttermilk
- 1/4 lb canadian bacon ,chopped up
- 1/3 cup minced parsley
- 1 cup frsh or frozen tiny green peas
Instructions
- In a pot over high heat,bring the potatoes,bay leaf,and garlic cloves to a boil in salted water. cover,reduce heat and simmer about 12 minutes or until potatoes are tender
- Drain potatoes in a colander and transfer to a large bowl. Discard bay leaf and garlic cloves
- Stir together the red onion,olive oil,vinegar,mustard,salt,pepper,celery seed in a small bowl
- while potatoes are still very hot ,add the onion mixture and allow to come to room tmperature.
- stir in the buttermilk, bacon, parsley and peas,mix gently to combine
- Taste to adjust seasoning and serve chilled or at room temperature.
