    List of Ingredients


    • 2 1/2 lbs little red potatoes scrubbed and cut into 3/4 inch chunks
    • 1 small bay leaf
    • 2 whole garlic cloves,peeled
    • 1 cup minced sweet red onion
    • 2 tablespoons fruity olive oil
    • 2 tablespoons tarragon white wine vinegar
    • 1 teaspoon whole-grain dijon mustard
    • 1 teaspoon salt to taste 1/2 teaspoon celery seed
    • 1 cup buttermilk
    • 1/4 lb canadian bacon ,chopped up
    • 1/3 cup minced parsley
    • 1 cup frsh or frozen tiny green peas


    Instructions


    1. In a pot over high heat,bring the potatoes,bay leaf,and garlic cloves to a boil in salted water. cover,reduce heat and simmer about 12 minutes or until potatoes are tender
    2. Drain potatoes in a colander and transfer to a large bowl. Discard bay leaf and garlic cloves
    3. Stir together the red onion,olive oil,vinegar,mustard,salt,pepper,celery seed in a small bowl
    4. while potatoes are still very hot ,add the onion mixture and allow to come to room tmperature.
    5. stir in the buttermilk, bacon, parsley and peas,mix gently to combine
    6. Taste to adjust seasoning and serve chilled or at room temperature.
