List of Ingredients
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons shortening
- 1 large onion;diced
- 2 lbs potatoes;peeled
- 3 tablespoons oil
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Cook potatoes in water to cover
- In a bowl,combine flour,baking powder,1/2 teaspoon salt and shortening blending with your fingers
- Add 2/3 cups water from the cooking potatoes,knead lightly
- Dough should be soft yet firm enough to roll out
- Add a little more flour to mixture if necessary
- Smooth into a ball and cover,set aside
- Brown onion in oil,drain and mash potatoes adding onion
- Add salt and pepper
- Roll 1/3 of the dough into a thin rectangle, about 7x14inches place a strip of potato mixture about 1 1/2 inches wide and high along the edge
- Roll like a jelly roll,cut into 1 1/4 inch pieces,stretch each piece to cover cut edges pinch with fork
- Continue process until finished dough
- Bake at 400 degrees until slightly browned,if they are going to be frozen, bake partially for 15 minutes and when ready to use finish off the baking process
