    • 2 cups flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 3 tablespoons shortening
    • 1 large onion;diced
    • 2 lbs potatoes;peeled
    • 3 tablespoons oil
    • 3/4 teaspoon salt
    • 1/4 teaspoon pepper


    Instructions


    1. Cook potatoes in water to cover
    2. In a bowl,combine flour,baking powder,1/2 teaspoon salt and shortening blending with your fingers
    3. Add 2/3 cups water from the cooking potatoes,knead lightly
    4. Dough should be soft yet firm enough to roll out
    5. Add a little more flour to mixture if necessary
    6. Smooth into a ball and cover,set aside
    7. Brown onion in oil,drain and mash potatoes adding onion
    8. Add salt and pepper
    9. Roll 1/3 of the dough into a thin rectangle, about 7x14inches place a strip of potato mixture about 1 1/2 inches wide and high along the edge
    10. Roll like a jelly roll,cut into 1 1/4 inch pieces,stretch each piece to cover cut edges pinch with fork
    11. Continue process until finished dough
    12. Bake at 400 degrees until slightly browned,if they are going to be frozen, bake partially for 15 minutes and when ready to use finish off the baking process
