    Recipe Introduction


    Very difficult, I recommend cutting the edge and making like much easier buy simply purchasing frozen wontons at your grocer before attempting this. It is said this is a lost art, I have discovered the reasoning for that statement.


    List of Ingredients


    • Noodle Dough:
    • 1/2 teaspoon salt
    • 2 eggs slightly beaten
    • 2 cups flour unsifted
    • Chicken Filling:
    • 2 cups cooked chicken,minced
    • 1 tablespoon onion,minced
    • 1 egg
    • Chicken Liver Filling:
    • 2 cups broiled chicken livers
    • 2 eggs hard boiled
    • 1 onion,small, minced
    • salt &pepper
    • 1 tablespoon chicken fat ( oil is just fine to substitute)
    • Meat Filling:
    • 2 cups chopped meat cooked
    • 1 egg
    • 1 tablespoon minced onion
    • salt & pepper
    • Cheese Filling:
    • 2 cups cottege cheese farmers,dry
    • 3 tablespoons matzo meal,or bread crumbs
    • 1 egg
    • 2 tablespoons minced onion
    • salt&pepper


    Instructions


    1. For the Noodle dough; add salt to eggs and eggs to the flour.Mix until the dough leaves the sides of the bowl, it should be fairly stiff;knead until smooth and elastic.
    2. For the filling, mix all the ingredients together ( a food processor does wonders)
    3. Roll out on a floured board,roll and stretch until paper thin;cut into 3' squares.
    4. Place one tablespoon of filling in the center and fold into a triangle shape.
    5. Crimp edges with a fork and drop into boiling water, cook until they rise to the top ( that's when you kow they are finished)
    6. Drop in soup or serve as appetizers, all but the cheese can go into the soup that is.
    7. Serve with sour cream,applesauce horse raddish


    Final Comments


    About 10 kreplach each per filling
