Recipe Introduction
Very difficult, I recommend cutting the edge and making like much easier buy simply purchasing frozen wontons at your grocer before attempting this. It is said this is a lost art, I have discovered the reasoning for that statement.
List of Ingredients
- Noodle Dough:
- 1/2 teaspoon salt
- 2 eggs slightly beaten
- 2 cups flour unsifted
- Chicken Filling:
- 2 cups cooked chicken,minced
- 1 tablespoon onion,minced
- 1 egg
- Chicken Liver Filling:
- 2 cups broiled chicken livers
- 2 eggs hard boiled
- 1 onion,small, minced
- salt &pepper
- 1 tablespoon chicken fat ( oil is just fine to substitute)
- Meat Filling:
- 2 cups chopped meat cooked
- 1 egg
- 1 tablespoon minced onion
- salt & pepper
- Cheese Filling:
- 2 cups cottege cheese farmers,dry
- 3 tablespoons matzo meal,or bread crumbs
- 1 egg
- 2 tablespoons minced onion
- salt&pepper
Instructions
- For the Noodle dough; add salt to eggs and eggs to the flour.Mix until the dough leaves the sides of the bowl, it should be fairly stiff;knead until smooth and elastic.
- For the filling, mix all the ingredients together ( a food processor does wonders)
- Roll out on a floured board,roll and stretch until paper thin;cut into 3' squares.
- Place one tablespoon of filling in the center and fold into a triangle shape.
- Crimp edges with a fork and drop into boiling water, cook until they rise to the top ( that's when you kow they are finished)
- Drop in soup or serve as appetizers, all but the cheese can go into the soup that is.
- Serve with sour cream,applesauce horse raddish
