Elf Soup (Cream of Broccoli & Cauliflowe

List of Ingredients
- 2 -4 heads Broccoli (depending on size & how much you want in it)
- 1 head cauliflower (can be left out)
- 1 C water
- 1 large onion, diced fine
- 3 Tbls. butter (maybe a little more)
- 2 cans Cream of Celery Soup
- 2 cans Cheddar Cheese soup
- 2 – 3 can-fulls of milk (depending on how thick you want it)
- Salt
- Pepper
- Celery Salt
- ½ - 1 C shredded cheddar Cheese (+ additional for topping)
Instructions
- Put the water and the florettes of the broc & cauli in a large pot. Cover and begin to steam until the colors are vibrant and the veggies are tender, but not mushy. DO NOT DRAIN. With a masher, or fork … break up the veggies a bit. ***
- While the veggies are steaming, sauté the onion in the butter until it is caramelized.
- Add the soups from the cans to the vegetables in the pot, then stir in the caramelized onions. Stir in the cans of milk … start with 2, you can always add more later). Season with salt, pepper and celery salt.
- Heat thoroughly over a low flame. When it is completely heated thru, stir in the shredded cheese (stir constantly to break it up and allow it to “melt” into the soup).
- Garnish with additional shredded cheddar cheese (I usually use the orange cheddar for a pretty contrast)
Final Comments
*** If you want it “chunky”, just break the veggies and leave it like that ...
I usually remove about ½ of the veggies & continue with the recipe – then use my stick blender to pulverize the veggies in the pot…. Then add the set aside “chunks” back in.
If you want it to be completely creamy … after you add the other ingredients, use a stick blender until there are no remaining chunks,
