    Cookie

    1 c Flour
    1 c Margarine
    2/3 c Cornstarch
    1 ea Lemon Rind


    FROSTING

    1/3 c Margarine
    3 tb Lemon juice
    12 oz Powdered Sugar

    Recipe



    1. Preheat oven to 325 degrees

    2. Cream flour and butter

    3. Add conrstarch, 1/3 of the powdered sugar (4 oz) and the lemon rind, mix until smooth

    4. Using a regular teaspoon, take a heaping teaspoon full of the mix and drop it onto an ungreased cookie sheet pan. Cookies will not grow a great deal

    5. Bake for 15 minutes. Will be lightly brown around edges only.

    FROSTING

    1. Mix butter, lemon juice and remaining powdered sugar till smooth consistency.

    2. Place a teaspoon full of frosting on each cookie after they have cooled.

    Cookies will easily crumble (MELT) in your mouth

    Yield: 10 servings

    NOTE: This recipe makes a small batch and doubling this recipe may need to be considered.
