Great cookies to make these look like they have snow on top use white chocolate morsels when making the topping instead of the semi-sweet chocolate morsels. Makes 4 dzn cookies.
1 cup butter (2 sticks),softened
1 cup confectioner's sugar (powdered sugar)
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
filling:
1 package (3 ounces) cream cheese
1 cup confectioner's sugar
2 Tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 cup chopped pecans
1/2 cup flaked coconut
topping:
1/2 cup semi-sweet chocolate chips
2 Tablespoons butter
2 Tablespoons water
1/2 cup confectioner's sugar
Recipe
In a mixing bowl, cream butter, sugar and vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. Shape into 1 inch balls and place on ungreased cookie sheets. Make a deep dent in the middle of the ball. Bake at 350 for 10-12 minutes. Remove and let cool.
For filling beat cream cheese, sugar, flour and vanilla in a mixing bowl, add pecans and coconut, mix well. Spoon 1/2 teaspoon into each cookie (this gets a bit sticky; try using you fingers dipped in water to apply the filling).
For topping, heat chocolate chips, butter and water in a small saucepan until melted. Stir in sugar, drizzle over cookies.
