    Recipe Introduction


    Total time: 35 minutes
    Serves 4 to 6 (makes 8 cups)

    List of Ingredients




    5 tablespoons seasoned rice vinegar
    4 tablespoons fresh lime juice
    1 tablespoon sugar
    2 teaspoons grapeseed or canola oil
    2 teaspoons finely grated, peeled fresh gingerroot
    1 to 2 tablespoons finely chopped, seeded hot red chile, or to taste
    1/2 teaspoon kosher salt
    8 cups thinly slice Napa cabbage (about 1 pound)
    2 carrots, grated or cut into julienne
    1 red bell pepper, cut into thin strips
    3 scallions, sliced into thin strips
    1/2 cup coarsely chopped fresh mint leaves

    Recipe



    1. In a large salad bowl, whisk together vinegar, lime juice, sugar,
    oil, ginger, red chile, and salt. Add remaining ingredients.
    2. Toss and let stand, uncovered, at room temperature, 15 minutes before
    serving.
