    Banana Bran Muffins

    List of Ingredients




    1 1/2 cups Bran Flakes
    1 cup mashed ripe banana
    1/2 cup milk
    1 egg
    3 Tbs. oil
    1 cup flour
    1/4 cup sugar
    2 tsp. baking powder
    1/4 tsp. baking soda
    1/4 tsp. cinnamon
    1/8 tsp. nutmeg

    Recipe



    Preheat oven to 400 degrees. Spray muffin tin with nonstick cooking spray. Combine cereal, banana, milk, egg and oil in bowl; mix well. Let stand 5 minutes; stir to break up cereal. Combine flour, sugar, baking powder, baking soda, cinnamon and nutmeg in bowl. Add cereal mixture all at once to flour mixture, stirring just until moistened. Divide evenly among muffin cups. Bake 20 to 25 minutes.
    Yield: 12 muffins
    Nutrition per muffin: 123 calories, 20 g carb, 2.5 g prot, 4 g fat, 18 mg chol, 112 mg sodium, 1 g fiber
