Heart Healthy Oatmeal Bread

This a delicious and healthy bread.
List of Ingredients
1/2 cup quick oats, toasted
1 cup boiling water
1/2 cup whole wheat flour
1 Tbs. flax seed meal
1 pkg. yeast
1/4 cup firmly packed brown sugar
1/2 cup warm water (105-115 degrees)
1 tsp. salt
2 1/2 - 3 cups bread flour
Recipe
Add oats to boiling water. Let sit until water is soaked up. Add the whole wheat flour, flax seed meal, brown sugar and salt. Let cool until it reaches 115 degrees.
Dissolve yeast in warm water. Add oat and yeast mixtures to a mixing bowl. With bread hooks, combine. Add enough bread flour to make a soft dough. Knead in mixer for 10 minutes or until dough is elastic. Spray bowl with nonstick cooking spray. Turn dough in bowl until all sides are coated. Cover and let sit until dough is doubled, about 1 hour.
Spray bread pan with nonstick cooking spray. Place dough in pan. Cover and let rise until almost doubled, about 45 minutes.
Heat oven to 400 degrees. Bake 30 minutes. Remove from bread pan and cool on a wire rack.
Yield: 1 loaf
