    You can't even tell you're eating zucchini. This is a great way to use up the zucchini from your garden.

    List of Ingredients




    ½ cup butter, softened
    ¼ cup sugar
    ¼ cup Splenda
    ½ cup firmly packed brown sugar
    1 egg
    1 tsp. vanilla extract
    2 1/8 cup flour
    1/3 cup cocoa
    1 tsp. baking soda
    ¼ tsp. salt
    2 cups finely grated zucchini
    1 cup chocolate chips

    Recipe



    Preheat oven to 350 degrees. Spray cookie sheets with nonstick cooking spray.
    Cream together butter, sugars and Splenda until smooth. Beat in egg and vanilla extract. Combine flour, cocoa, soda and salt; gradually add to creamed mixture. Mix in zucchini. Stir in chocolate chips.
    Drop by rounded spoonfuls onto cookie sheets.
    Bake for 8 minutes. Allow cookies to cool on cookie sheets for 5 minutes before removing. Finish cooling on a wire rack.

    Yield: 48 cookies
