Poppy Seed Cookies

1 cup butter, softened
2/3 cup sugar
¼ tsp. salt
1 egg
1 tsp. vanilla
¼ tsp. almond extract
2 ½ cups flour
4 tsp. poppy seedsRecipe
In a large bowl, beat butter for 30 seconds. Beat in sugar and salt until combined. Beat in egg, vanilla and almond extract until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in poppy seeds.
Divide dough in half. Roll each half into a log ~1 ½” in diameter. Cover and chill 2 hours.
Preheat oven to 350 F. Cut cookies into ¼” thick slices. Place on ungreased cookie sheets. Bake for 9-11 minutes or until edges are lightly browned. Transfer cookies to wire racks; let cool.
