Spritz Cookies

Recipe Introduction
These are wonderful. I make them every year at Christmas. They don't last long in my family.
List of Ingredients
2 cups butter, softened
3/4 cup sugar
1 tsp. almond extract
3 large egg yolks
2 1/2 cups flourRecipe
Preheat the oven to 375 degrees Farenheit.
In a bowl of a standing electric mixer fitted with the paddle attachment, beat together on medium speed the butter, sugar and almond extract until very light and fluffy, about 5 minutes. Beat in the egg yolks, 1 at a time, beating smooth after each addition. Scrape down the side of the bowl and beater. On low speed, add the flour and mix only until it is completely absorbed. Remove the bowl from the mixer and finish mixing the dough with a large rubber spatula.
Using a cookie press, press the cookies out onto cookie sheets. Bake the cookies for 8 to 10 minutes, or just until they are a very pale golden color.
Remove cookies to a wire rack to cool.
