    Recipe Introduction


    This delicious cookie is excellent for Christmas or anytime. It goes great with a steaming cup of coffee.

    List of Ingredients




    1 cup butter, softened
    ½ cup sugar
    ½ tsp. baking powder
    1 egg
    1 tsp. almond extract
    2 cups flour
    3 oz. semi-sweet chocolate, finely chopped (1/2 cup)
    1 cup finely chopped almonds
    1 cup semi-sweet chocolate chips
    1 tsp. shortening

    Recipe



    In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the sugar and the baking powder; beat until combined. Beat in the egg and almond extract until combined. Beat in as much of the flour as you can using the mixer. Stir in any remaining flour, the chopped chocolate, and ½ cup of the nuts. Cover and chill for 1 to 2 hours or until dough is easy to handle.
    Preheat oven to 350 degrees. On a lightly floured surface, shape ¼ cup of the dough at a time into a 9” rope. Cut each rope into three 3” pieces. Place pieces on cookie sheet.
    Bake for 15 minutes or until lightly browned. Transfer cookies to a wire rack and let cool.
    Melt 1 cup chocolate chips and shortening. Dip one end of each cookie into chocolate. Place dipped cookies on a cookie sheet or tray lined with waxed paper. Sprinkle cookies with remaining nuts. Let cookies stand until chocolate sets.

    Yield: 36 cookies
