    Sweet Potato Bake

    adapted from Eating Light, Vol. XIII, No. 3, 2003

    List of Ingredients




    3 lb. sweet potatoes, peeled and cut crosswise in ¼” slices
    3 medium Fuji apples, cut in half, cored and cut in ¼” slices

    Cider Sauce
    1 ½ cups apple cider
    1 cup fresh or frozen cranberries
    ½ cup sugar
    3 Tbs. butter
    1 Tbs. freshly grated lemon peel
    2 Tbs. freshly squeezed lemon juice
    ¼ tsp. salt

    Recipe



    Preheat oven to 400 degrees. Layer potatoes and apples in a 9x13” baking dish.
    Cider Sauce: Boil ingredients in a saucepan 5 minutes, or until cranberries burst; pour over potatoes and apples. Cover with aluminum foil; bake 1 hour, or until tender.

    Servings: 12
