White Cheddar Mashed Potatoes

List of Ingredients
10 lb. peeled potatoes
1 lb. butter
2 ½ Tbs. fresh thyme, minced
16 fl. oz. heavy cream
12 fl. oz. sour cream
2 tsp. white pepper
3 ½ Tbs. salt
¾ lb. white cheddar cheese, shredded
1 ¾ c. green onions, sliced thin Recipe
Cook the potatoes. Heat the cream, sour cream and butter. Mash the potatoes. Add the cream mixture until the right thickness. Add the remainder of the ingredients.
If you don’t have fresh thyme, don’t use dried thyme.
If you want garlic mashed potatoes, use a whole head of garlic and chop off the stem end. Spread olive oil over the cut end. Bake at 350 degrees for ~30 min., until soft.
Squeeze out the garlic through a fine wire mesh.
Add the garlic in place of the cheese onions and thyme.
If you want to make the above potatoes with skins, use red potatoes and cook with the skins on. Follow the rest of the above directions.
