    3/4 pound mushrooms, chopped
    1 pound ripe tomatoes, 3-4 medium, cut
    2 tablespoons water
    1 medium onion, minced
    6 tablespoons oil
    1/2 dried whole red pepper
    1/2 pound ground beef
    Salt and pepper
    2 fresh basil leaves or 1/8 teaspoon dried basil leaves
    1 pound macaroni, cooked and hot
    1 cup Parmesan cheese

    Boil tomatoes 5 minutes.

    Saute' onions and garlic in oil and red pepper. When barely colored add meatl, salt and pepper. Brown 5 minutes. Add mushrooms, basil and some water (about 2 tablespoons).

    Put tomatoes through food processor or chop finely. Simmer 35 minutes until sauce is fairly thick.

    Mix sauce and macaroni. Top with cheese. Mix well.

    Makes: 4 servings
