    1 1/2 cups cooked meat (leftover roast beef or chicken)
    1 Tbls. butter or oleo margarine
    1 Tbls. flour
    1/2 cup milk
    1/2 tsp. salt
    1/4 tsp. pepper
    dash nutmeg
    1 egg, beaten
    cracker crumbs

    Recipe



    Melt the butter in a saucepan; Add the flour and cook stirring constantly. Slowly add the milk, stirring constantly until thick. Add the seasonings and meat. Combine thoroughly. Cool and shape into pattie. Dip in beaten egg and roll in cracker crumbs. Fry in salad oil in heated skillet. Makes 5 or 6 patties.
