Pasta with Herbed Feta and Olives
Makes 4 servings.
List of Ingredients
- 2 large beefsteak tomatoes, diced
- 1 package (4 oz.) crumbled feta cheese with herbs
- 1/3 cup oil-cured olives, chopped
- 1/4 cup chopped flat-leaf parsley
- 2 tablespoons extra-virgin olive oil
- 1/2 tsp. freshly ground pepper
- 1/4 tsp. salt
- 1 small garlic clove, minced
- 2 packages (9 oz. each) fresh linguine
Instructions
- In large serving bowl, combine tomatoes, feta, olives, parsley, oil, pepper, salt, and garlic.
- Cook pasta according to package directions; add to bowl and toss well.
