Roasted Honey Dijon Potatoes
These roasted potatoes are easy to make and have great flavor. Make extra, as they are wonderful as leftovers.

List of Ingredients
- 1 pound potatoes, cut into 1 inch pieces
- 1 small onion, thinly sliced
- 1/4 cup dijon mustard
- 1/4 cup olive oil
- 1 tsp. honey
- 1 T chopped parsley
- salt and pepper to taste
Instructions
- Pre-heat oven to 375°F.
- Mix together mustard, honey, oil and salt and pepper.
- Mix together potatoes and onion slices.
- Pour sauce over vegetables and mix until well coated.
- Place in a greased baking pan and bake for about 35-40 minutes or until potatoes are tender.
- Sprinkle parsley over potatoes and serve.
