Mojito

Recipe Introduction
Mojitos are my drink of choice. I first tried mojitos while listening to Cuban bands in one of the many cafes around Havana. A mojito made correctly is the best cocktail in the world!
List of Ingredients
- SIMPLE SYRUP - 1/2 cup sugar and 1/2 cup water
- 8 (or more) fresh mint leaves
- Crushed Ice
- 2 fl oz white rum (Havana Club is the best)
- Club Soda
- 1/2 fl oz dark rum
- Mint leaves or sprigs to garnish
Instructions
- First make the simple syrup by combining the 1/2 cup sugar and 1/2 cup water in a small saucepan and stir over a low heat until the sugar dissolves.
- Remove from heat and allow to cool and place in a clean bottle or glass jar and refrigerate. This will keep indefinitely and is a good base for many cocktails.
- THE MOJITO
- In a tall tumbler combine the mint, syrup and lime juice.
- Muddle or pound the mint into the juice and syrup. If you do not have a muddler use the handle end of a wooden spoon. Muddle until the syrup is greenish and the leaves are well broken into bits.
- Fill the glass with crushed ice.
- Fill the glass ALMOST to the top with club soda.
- Carefully float the dark rum on the top.
- Serve at once - makes one MOJITO!
Final Comments
This recipe calls for 8 mint leaves - in Cuba the best mojitos have far more than 8 leaves. Feel free to add more as the Cuban bartenders do!
