Lilly's Sweet Potato Pseudo Souffle

Recipe Introduction
This is a recipe Karen passed on from her mom.
List of Ingredients
- 2 1/2 cups mashed canned or cooked sweet potatoes. 1 lb - 2oz can or 2 lbs fresh.
- 1/2 tsp salt
- dash pepper
- 2 tbsp butter
- 10 marshmallows
- 1 cup chopped pecans
- 1 tbsp butter
- 1/2 cup honey
Instructions
- Combine mashed sweet potatoes, salt, pepper and 2 tbsp butter.
- Divide the quantity of the mix.
- Place 1/2 in a casserole and spread on top the marshmallows over the mixture.
- Cover the marshmallow layer with the remaining potatoe mix.
- Top with pecans - use more if you really like nuts!
- Heat the honey and 1 tbsp of butter in a small skillet over high heat.
- Drizzle over the mixture.
- Bake at 350 for 20 - 25 minutes.
Final Comments
Karen was Chris's boss at Dayton's in Mpls. She now lives with her husband in Santa Fe.
