    Cheesy Hashbrown Casserole

    • 1 (2 lb) package frozen hash browns
    • 16 ounces low fat sour cream
    • 1 (10 3/4 ounce) can 98% fat free cream of chicken soup
    • 1/2 cup butter
    • 1/2 cup chopped onion
    • 2 cups shredded sharp cheddar or colby cheese


    Instructions


    1. Preheat your oven to 350 degrees Fahrenheit.

    2. Season slightly thawed potatoes with salt and pepper.

    3. Sautee the onions in the butter, until soft.

    4. In a bowl stir together the soup, butter and onions, sour cream, and 1 cup of cheese.

    5. Slowly add the potatoes to your mixture, coating them evenly.

    6. Transfer coated potatoes into a 9"x13" greased baking pan.

    7. Sprinkle the remaining cup of cheese over the top of the potatoes.

    8. Bake for approximately 45 minutes.
