Cucumber Pinwheels

1 large cucumber
2 hard cooked eggs, shelled & mashed
2 tbsp chopped water cress
1 tbsp mayonnaise
1/2 tsp salt
1/2 tsp dry mustard


Recipe



Pare cucumber, ream seeds from the middle with sharp paring knife or spoon. Mix the rest of the ingredients and stuff the cucumber (eggs should be mashed of course). Cut cucumber into 1/2" slices. Great served with tea sandwiches.

Makes 6 servings.
