Posted by: gaudrey_GA: Pin wheels for those who don't like flour tortillas. I have never deveoped a taste for flour tortillas so decided to make pinwheel sandwiches using rolling pin bread. The filling possibilities are endless and they are so pretty.
List of Ingredients
8 thin slices sandwich bread, crusts removed
16 ounces softened cream cheese (may use low fat)
1/4 cup finely minced green onions
2 Tablespoons finely minced chives
3 Tablespoons minced ripe olives, well drained
2 ounce jar diced pimientos, well drained
2 Tablespoons freshly shredded carrot
2 Tablespoons minced seeded cucumber
Finely minced jalapeno pepper to taste, seeds removed before mincing

Trim crusts from sandwich bread. Place each slice between waxed paper and roll with a rolling pin to flatten them. Combine remaining ingredients until well blended. Spread on flattened bread slices. Roll up tightly starting on a long side. Place seam side down on a plate, cover with plastic wrap, and chill 2 to 3 hours. Slice with a sharp knife into 1 inch pieces.
Makes about 40.
