List of Ingredients
2 heads fresh cauliflower cut into bite sized pieces [or one head cauliflower and one head broccoli]
1 pint grape or cherry tomatoes
2 [10 oz cans] button mushrooms, drained
2 cups baby carrots
1 cup pitted black olives [optional]
1/2 small red onion, sliced
8 oz bottle Italian salad dressing [or your favourite vinaigrette salad dressing]
3/4 lb cooked shrimp peeled but with tails left on
4 hard boiled eggs peeled and halved
Black pepper to taste
Recipe
Put cauliflower pieces, tomatoes, mushrooms, carrots and olives in a large bowl.
Pour entire contents of dressing over top.
Cover and chill overnight, stirring before you go to bed.
In the morning, add shrimp to mixture stirring gently, keep covered and refrigerated.
When ready to serve, drain shrimp veggie mixture well and arrange on a platter.
Arrange hard boiled eggs around edge of platter.
Sprinkle black pepper over all and serve.
