Corn Stuffing Balls

3/4 cup butter
1-1/2 cups water
12 oz box stuffing mix
2 cups fresh cut corn
2 eggs*
1/2 cup chopped parsleyRecipe
Combine the butter and water, add the stuffing mix. Mix well then add the corn, eggs and parsley. Again mix well. Shape into small balls and place into a cookie sheet lined with parchment paper or sprayed with pam.
Bake at 400ºF for about 15 minutes.
Allow to cool for a few minutes, remove and spear with a toothpick for serving.
* add 1 egg, then check for texture, you may not need that second egg. They should roll easily into balls, but you don't want them so wet that they will not stay together. If this happens chill well before baking.
