Domaine Saint Luis Cake Aux Olives

4 Tbs flour
2 tsp baking powder
1/2 tsp salt
4 eggs, lightly beaten
1 cup milk
1 cup of swiss or parmesan cheese
1 cup of halved kalamata or black olives
1 Tbs of olive oilRecipe
Combine the flour, baking powder and salt. Add the eggs, whisk in the milk and add the cheese, then the olives and last the olive oil. Stir and set aside for 2 hours.
Set oven at 425ºF. Stir the batter and pour into a 6-cup buttered loaf pan.
Bake for 30 minutes. Allow to sit for a few minutes then you can cut into small squares or serve in slices. Spear each little square with a fancy toothpick.
* If you serve in slices it is very good with a tomato sauce on the side.
