Gazpacho Dip

List of Ingredients
2 cans diced tomatoes (NOT drained)
1 can diced black olives
1 minced garlic clove
1 bunch green olives, chopped (use white and most of green, too)
3 Tbsp. olive oil*
3 Tbsp. vinegar* (I use apple vinegar lately and I like the taste)
salt and pepper to tasteRecipe
mix all ingredients in large bowl and refrigerate, stirring occasionally. Serve with tortilla chips.
*You can add more or less oil and vinegar to taste. I don't usually measure this part, but that gives you a starting point.
Posted by spanishteacher: My DH's aunt used this for a baby shower. She said everyone stood around the bowl and ate right there because they liked it so much. I brought this to Thanksgiving at his grandmother's and the whole family fell in love with it. I'm not allowed to come to their house unless I bring it! This can be easily made in large quantities. When I bring this, I usually pass out the recipe several times. Most of the time, people just stand around the bowl with chips in hand.
