Margarita Fruit Dip

2 pkg (8 oz each) cream cheese
1/2 c sugar
5 Tbsp frozen margarita mix, defrosted
1/2 c tequila
1 Tbsp lime juiceRecipe
In a small mixing bowl beat cream cheese and sugar until light and fluffy. Scrape down the sides and add margarita mix, tequila and lime juice. Mix on low speed until blended and then on medium speed until smooth. Refrigerate for at LEAST 2 hours before serving.
Posted by: ConnieH: This is my favorite. You can use a sombrero and place it on a platter. Then punch down the top and put the bowl of dip into the indentation. Line the brim with plastic wrap and arrange fruit in the brim, garnished with sprigs of mint. Suggestions for fruit, in connection with a Mexican theme, could be watermelon, cantaloupe, grapes, papayas, mangoes, strawberries, pineapple, kiwis, bananas, etc.
This is really a refreshing dip. I can eat it with a spoon. I usually double the recipe, then you can use the whole can of margarita mix. It keeps pretty well, though it has never lasted long around me! --ch
