Mini Wonton Quiches

List of Ingredients
4 eggs
1 oz finely chopped cooked ham (I have used deli ham as well)
2 Tbs chopped green onions with the tops
2 Tbs chopped sweet red pepper
1 Tbs flour
24 small square wonton wrappersRecipe
Combine all ingredients but wrappers. Mix and set aside.
Evenly coat 24 mini muffin cups with spray. Gently press 1 wrapper into each cup, allowing the ends to extend over the sides of the pans.
Spoon about 1/2 Tbs of filling into each wrapper lined cup.
Bake at 350ºF for 12-15 minutes.
* Once the wrapper is in the cup. I use a scrunched up wonton to gently press down the inside of the wonton cup lightly. So I don't tear the liner while trying to mold the wrapper in place. You will notice that there will be quite a bit of over lap. Trim slightly and you will have a more ruffled appearence, rather then points sticking out.
Posted by: jcz04 Posted on: 8/11/2005 - Store bought help makes this appy go very fast. I snip a little bit off of the corners of the each wonton cup once filled, just to make them look neater. The wonton wrapper can be used with any kind of filling and they are not as heavy as some of the pastry shells can be. Don't trim the wrappers first, I have reuined more wrappers tryin to save 5 minutes and everyone will look different. ~Janie~
