4 Tbsp. butter
3 eggs
1 cup flour
1 cup milk
1 tsp. salt
1 tsp. baking powder
1 lb. Monterey Jack cheese, grated
2 packages chopped spinach, thawed and drained



Recipe



Preheat oven to 350ºF. In a 9” by 13” by 2” baking pan, melt butter in oven. Remove.

In a large bowl, beat eggs, then add milk, flour, salt and baking powder. Mix well, then add cheese and spinach. Pour mixture into baking pan and spoon it around a bit to mix in the melted butter (don’t do lots of mixing though).

Bake 35 minutes. Remove from oven and cool 45 minutes in order to set. Cut into bite sized pieces.
