Sausage Logs In Puff Pastry

1-1/2 pounds of cooked rope Italian sausage
1 sheet puff pastry
1/4 cup spicy brown mustard
red pepper flakes to tasteRecipe
Set oven at 400ºF.
Place the pastry on a flat cutting board and cut in 1/2 lengthwise. Spread a thin layer of mustard onto the pastry sheet, keeping from 1" of the sides of the edge.Sprinkle with red pepper flakes.
Cut the sausage to the length of the pastry sheet (15") and place on the edge to roll. Roll the pastry around the sausage and press well to seal. Cut the roll into 1" logs and place seam side down on a cookie sheet.
Bake for about 10-15 minutes. Serve with brown mustard or honey mustard.
* You may want to wrap the roll in plastic wrap and chill well before cutting into the small logs
* Spread the puff pastry with spaghetti sauce and sprinkle with some parm cheese instead of the mustard.~~Janie~~
